九谷燒源自石川縣南部的加賀地區，特別是現今的金澤市、小松市、加賀市和能美市。這一工藝傳統始於1655年左右，當時加賀藩的領主派遣陶匠到佐賀県有田學習製瓷技術，隨後在當地發現了適合製作陶瓷的優質瓷土，從而建立了九谷燒窯。
1873年維也納世界博覽會的參展使九谷燒享譽國際，此後「Japan Kutani」成為日本主要的出口瓷器品之一。如今，九谷燒被日本經濟產業大臣認定為傳統工藝，其作品被大英博物館和盧浮宮等世界著名機構收藏。九谷燒最顯著的特徵是其獨特的五色彩繪系統，稱為「九谷五彩」（gosai-de），包括紅、黃、綠、紫和深藍五種顏色。這些顏色是用傳統日本顏料（wa-enogu）繪製的，這種顏料賦予九谷燒特有的亮度和玻璃狀的透明感。
