    Days Coffee Roaster is a renowned specialty coffee roaster based in Niigata, Japan, founded by experienced roaster Shirai. Guided by the philosophy of “letting character emerge naturally rather than forcing it to stand out,” the brand has earned high recognition in the Japanese coffee scene, including a two-star rating in the Central Japan region in the TYPICA GUIDE 2024.

    Shirai has been deeply involved with coffee since high school, accumulating over ten years of professional roasting experience. He roasts on a direct-fire Lucky Coffee Machine, a setup that allows him to express the beans’ fruitiness, sweetness, and distinct flavor characteristics with great nuance. All coffees from Days Coffee Roaster undergo strict quality control, with regular cuppings and roasting workshops held to help promote and deepen coffee culture in Niigata.
